Welcome autumn: three dishes and three wines to enjoy

Goodbye summer, welcome autumn. Here comes the season of cooler days, of incessant work in the cellar, of days that offer more pleasant temperatures. Nothing better than sitting under a patio, perhaps in a beautiful country house, to enjoy the pleasures that only this season can offer. The breeze caressing us, a dish to enjoy, a glass of wine: sometimes the secret of happiness truly lies in the simplest things. This is why we thought of offering you three autumn recipes to go with as many wines made in Carpineto. 


Fettuccine zucca e pancetta - Carpineto Dogajolo Rosato


A dish as simple as it is tasty. An excellent balance between the sweet touch of the pumpkin and the savoury one of the bacon. All you need is a pan with extra virgin olive oil and finely chopped onion. Once the bacon is browned, add the pumpkin pieces with three or four ladles of vegetable stock (depending on the degree of creaminess you are looking for). An interplay of flavours, textures and aromas that will fully give you all the scents of autumn. What to pair with such an intense dish? Our choice falls on a wine that is structured and, at the same time, mineral and lively: Carpineto Dogajolo Rosato. Pale pink in colour, Carpineto Dogajolo Rosato presents itself in the glass with all its scents of rose, myrtle, vine flower, apple, currant and morello cherry. A very wide range of aromas and scents, which gives a surprising and elegant persistence to this small, great rosé. Arista alla fiorentina and Carpineto Farnito Cabernet Sauvignon 


And here we come to one of the typical recipes of the Tuscan tradition, especially of its capital city: Arista alla fiorentina. A dish that is a must on Sunday tables, especially in the autumn and winter months, this particular type of preparation - in addition to the arista pork loin - calls for garlic, herbs such as sage and rosemary, white wine and extra virgin olive oil. All prepared in the oven, at about 200 degrees centigrade, taking care to separate the sirloin from the bone, and then drizzled with seasoning. The result will be a soft and succulent arista, to be paired with a structured red wine, full-bodied and, at the same time, with good acidity and great taste-olfactory balance. The identikit of Carpineto Farnito Cabernet Sauvignon: a wine that originates in our Vino Nobile estate, in the hills of Montepulciano, with clean and intense aromas, with clear sensations of spices, liquorice, vanilla and morello cherry. A complex wine with a great structure, surprisingly pleasant to drink and never banal. Each sip presents different sensations, depending on how the wine evolves in the glass. The flavour is rich, full, dry: capable of revealing all the power and refined elegance of this pure Cabernet Sauvignon. The happy encounter between a Bordeaux grape variety and the established Tuscan winemaking tradition. A Super Tuscan to enjoy, sip after sip, without haste. Pasta e ceci and Carpineto Chianti Classico 


A great, great classic of poor Italian cuisine. A monument to taste and simplicity that, not by chance, has been a great success on our tables for decades. Pasta e ceci is both a “comfort” and a healthy dish. You choose the kind of pasta, usually short, which is cooked directly inside the chickpea soup stewed with a base of extra virgin olive oil and garlic. For those who wish, a part of the chickpeas can be separated and blended to obtain a tasty, enveloping cream. A play of textures that will give even more pleasure to this historic recipe. Pair it with a fresh, fruity, well-balanced wine that is always snappy and pleasant to drink. Carpineto Chianti Classico sums up all these characteristics in the glass.
