Sticky Ginger Sesame Pineapple Beef: recipe and wine pairing

Not many words can scare Italians as much as “Pineapple”. This doesn’t mean that we do not appreciate this very delicious tropical fruit, but that pairing it with our traditional dishes always represents a very slippery slope. You guessed it right, we are talking about Hawaiian pizza!

 

Jokes aside, we are here today to demonstrate that Pineapple is indeed a delicious fruit and it can be turned into a very interesting ingredient to be paired with some of the finest products coming from our land, a true specialty entirely made in Italy: our Rosso di Montepulciano DOC. Let’s dig into this recipe!

INGREDIENTS (6 servings)

  • 1 ½ cups of fresh pineapple chunks
  • 2 cups of chopped cilantro and basil
  • 1/4 cup scallions
  • 1 ½ pounds ground beef 
  • 4 garlic cloves
  • 2 tbs lime juice
  • Black pepper and chili crisp oil to taste
  • 1/3 cup chopped roasted peanuts
  • 4 chopped cucumbers
  • 2 tbs sesame seeds
  • ¼ cup pickled ginger 
  • 1 tbs soy sauce
  • 1 tbs honey

Preparing some delicious sticky ginger sesame pineapple beef is a lot easier than you might think. The ground beef should be fried in olive oil, which you need to bring to a high temperature in a pan, large enough for the purpose. First, it is necessary to heat the oil until it becomes hot and starts to shimmer (usually, this will happen in approximately 1-2 minutes). The beef should then be placed in the skillet without being broken into small pieces and allowed to cook undisturbed for some time until it turns brown (about 2-3 minutes). 

Now the fun part! Using a spatula, break the beef into smaller bite-sized pieces and continue cooking without stirring for another 2-3 minutes. After this, you can add minced garlic and ginger; cook for approximately 1-2 minutes until they become fragrant. Then you can add honey, soy sauce, chili crisp oil, and sesame seeds. During this phase do not forget to stir your sticky beef! Now, we can prepare our salsa. 

 

Last but not least, once you’re done with the beef cooking, you can add the pineapple chunks and some more spices and ingredients of your choice to garnish a wonderful “pineapple salad”, such as some tablespoons of pickled ginger jar juice, chopped cucumbers, cilantro, scallions, basil and peanuts, maybe topped with a fresh squeeze of lime juice to enhance its taste. Mix all your ingredients together with the sticky-beef until well combined. Traditionally, in Korean cuisine, dishes such as this one are accompanied by rice. If you want to, you can complete the recipe by spooning your preparation generously over a bowl of rice, finishing it up with some more cucumber/pineapple salad on top. Yummy!

 

This healthy recipe surely feels tasty and exotic, so pairing it with wine may not be so straightforward. The beauty of our products, however, lies also in their versatility. For this preparation we recommend trying our Rosso di Montepulciano DOC 2021.

 

The grapes used to create this masterpiece include Sangiovese (Prugnolo Gentile), Canaiolo, and other authorized grape varietals. The terrain characteristics feature a mostly southerly exposure with moderately alkaline soil and a sandy alluvial sub-strata. During vinification, the skins are macerated in the must for 10 to 12 days, with fermentation occurring at a controlled low temperature between 25-30°C (77-86°F). The wine matures after malolactic fermentation is complete and is bottled at the end of spring. It has a bright ruby red color and an intense perfume with hints of strawberries and cherries. The taste is fruity, young, fresh, and slightly tannic. The optimal serving temperature is between 17-19°C.

 

This pairing will delight your taste buds, bringing your sensations to unexpected levels of enjoyment. Pairing wine and fruit sure is a challenge, but one we can certainly win.

In Spain this is a well established tradition, called Sangria, a real mix of fruit and dry red wine together with sugar, liqueurs and spices. Exotic fruit such as pineapple, mango or coconut will usually be suggested together with a glass of an elegant rosé, but thinking outside the box will lead you to more unique experiences.
