To achieve these objectives we follow our very own strict production code:
- Adoption of modern agricultural methods on both vines and soil
- Eco-friendly chemical treatments applied conscientiously
- Extreme attention to the preservation of our biodiversity
- Production and use of renewable energy, such as solar panel technology
- Optimizing harvest timeliness, in a constant effort to maximize grape health and its consequent quality
- Extreme hygiene and daily sanitation of all systems
- Constant monitoring of temperature and other analytical data of all musts and wines undergoing fermentation
- Fermentation with highly selected natural yeasts, able to guarantee absence of harmful contaminants
- Natural, spontaneous stabilization for ‘reserve’ wines. Cold stabilization for young wines
- No use of additives, adjuvants or stabilizers, even if permitted by law. (The only exception are for the irreplaceable sulfites, which are used in quantities much below legal limits).
- Wines are tested before, during and after bottling and must adhere to higher standards than local appellation or “organic” wine laws.
